So easy to make and so tasty, caprese is an italian favourite! Just make sure you buy good quality mozzarella and tomatoes.
Today I felt creative and decided to make this caprese in vertical layers as in the photo. Simply a few layers of mozzarella, Pistachio Pesto and tomatoes. Then add some toasted bread, some fresh basil leaves and extra virgin olive oil and enjoy it.
